Tortilla Soup

  • 1 package boneless chicken
  • 1 clove garlic
  • 1 can green chilies chopped
  • 1 t. ground cumin
  • 1/2 t. dried oregano
  • 1 T. olive oil
  • 1 can tomatoes chopped
  • 1 onion grated
  • 1 t. chili powder
  • 1/4 t. cayenne pepper
  • 3 cans chicken broth
  • 3 cans water
  • Monterrey Jack & Cheddar cheese
  • White Corn Tortilla Chips


  1. Grate onion and sauté in oil with chilies.
  2. Add chicken broth and water.
  3. Chop chicken into bite size pieces and add to broth mixture.
  4. Add remaining ingredients, except tortilla chips and cheese.
  5. Simmer for about 4 hours.
  6. Serve over hot tortilla chips, sprinkle with cheese.
