Vegetable Rice Ring

- 2 c. cooked rice
- 1/2 c. viva Italian salad dressing
- 1/2 c. mayonnaise
- 2 medium cucumber, seeded and chopped
- 3 small tomatoes, peeled, seeded and chopped
- 1 medium green pepper chopped
- 1/2 c. chopped green onion
- Combine cooked cooled rice and Italian salad dressing and cover.
- Chill several hours or overnight.
- Add mayonnaise to undrained rice mixture and stir until combined.
- Fold in cucumbers, tomato, green pepper, green onions.
- Press into 5-1/2 cup mold.
- Cover and refrigerate at least 2 - 3 hours.
- To serve, unmold onto lettuce lined platter.
- Fill center with cherry tomatoes.
